Meat is at the heart of Gran Fierro. We select only the highest quality cuts of beef, which we age ourselves and prepare with respect for Argentine tradition. Every steak is a balance between perfect heat, time, and flavor.
Approximately 80% of the world’s charcoal production comes from tropical regions, where regulations are often lacking. This causes massive deforestation. To draw attention to this problem, we have decided to use charcoal in our restaurant not only for cooking, but also as decoration.
We discovered that not all coal is the same. We stopped using quebracho, a tree from the Gran Chaco region of South America, where deforestation is among the most widespread in the world. We replaced it with Marabú from Cuba. This invasive shrub disrupts ecosystems and agriculture, and controlling it helps to solve these problems. It is the opposite of deforestation – an environmentally friendly solution.
Biomass pellets are made from various materials, such as wood waste, forest residues, or plant fibers. Burning biomass instead of traditional coal reduces the amount of carbon dioxide in the air. Although the market for pellets for home grills is growing rapidly, there is still a lack of professional solutions that would suit gastronomy at our level.
Biochar is a type of charcoal produced from organic materials using processes such as pyrolysis or carbonization. We are working on developing a pyro-grill that will not only be able to grill, but also produce biochar at the same time. We can then use this biochar as compost and return carbon back to the soil. It’s a win-win situation for both nature and our kitchens.
